The olives used in Loco Galbasa are hand-harvested and immediately milled within hours to preserve their freshness. Picked early, these olives undergo processing in a modern technology estate mill, overseen by master millers under the watchful eyes of Marco and Sandro.

The extraction process does not include added water, relying instead on the natural water content found within the olives.
